Last year when I was in Wanaka, I went for a very fine lunch at Bistro Gentil where James Stapley, one of my favourite chefs, runs the kitchen – he used to cook at Whare Kea, a luxury lodge on the shore of the lake. At Gentil, the food is smart and clever, deft and thoughtful… And yet it’s still food, much of which comes from the restaurant’s vegetable garden and orchard. You should go. In the mean time, here’s the piece I wrote for Cuisine.
